A remarkable fish has found its way into our kitch

A remarkable fish has found its way into our kitchen this week: a 75kg Cornish Atlantic bluefin tuna. Absent from British waters since the 1960s after decades of overfishing, this species is now returning to our seas, and with it comes a chance to celebrate responsibly and cook with care.

This tuna was caught by @nomad_seafoods, a local Cornish company working from the Helford River. Using rod and line methods only, they are one of just 15 vessels licensed to catch a maximum of three tuna per day, ensuring the highest standards of sustainability.

We don’t take the privilege of serving fish like this lightly. Every cut is considered, every dish created with respect for the journey it’s taken to reach our kitchen. Over the coming days we’ll be offering beautiful tuna dishes that honour this incredible catch in the best ways we know how!
